Chicken Tumeric Breakfast Muffins
I designed this recipe while undertaking a very restricted diet, and needing something to prepare for breakfast. Little did I know that these would turn out to be absolutely gorgeous, satisfying and easy to make!

CHICKEN TUMERIC BREAKFAST MUFFINS

These muffins are perfect for breakfast, and are suitable for a wide range of restricted diets!
Ingredients
500g Chicken mince
2 TBS fat of your choice (coconut oil, olive oil, butter, lard - I used beef drippings).
1 Onion, diced
3 Garlic cloves, minced
2 Eggs (beaten)
3 TBS Parsley or Coriander, finely chopped
1 TSP Tumeric powder
3 TSP Curry Powder
1 TSP Lemon juice
1 TSP Salt
Pepper
Method
1. Preheat oven to 180c degrees (400F) and line a baking tray with baking paper.

Dice the onion and the garlic cloves if you haven't done so already.
Sautee the onions in the oil of your choice (I used beef drippings)
until translucent. Add the garlic to the pan until fragrant, about 1
minute. Take the onion and garlic mixture off heat, set aside to cool.

In a large bowl, mix together the chicken mince, 2 beaten eggs, 3 tbs
parsley, 1 tsp tumeric powder, 3 tsp curry powder, 1 tsp lemon juice, 1
tsp salt and pepper to taste. When the onion and garlic mixture is
cooled, add this to the bowl. Mix well.
4. Spoon muffin mixture into a muffin baking tray. This recipe should make 12 medium sized muffins.
5. Bake for 15-20 minutes, or until the muffins start to brown around the edges.
